Bohri Mutton Biryani

Bohri Mutton Biryani
Ingredients

• 1 kg mutton
• 1 tbsp green chilli paste
• 2tbsp ginger-garlic paste
• 4 potatoes
• 2 tsp red chilli powder
• 2 black cardamom
• 1 cinnamon
• 5-6 cloves
• 5-6 black peppers
• 1 tsp cumin seeds
• 1/2 cup yoghurt
• 2 tsp salt
• 1/4 tsp turmeric
• 3 onions, sliced
• 1/4 tsp mace
• 1/4 tsp nutmeg (javantri powder)
• 1/2 cup oil
• 1kg rice
• Whole garam masala (6 cloves , 6 black cardamoms, 2 green cardamoms, 1 small piece of cinnamon, 6 black pepper corns and 1tsp cumin seeds)
• 1/8 tsp saffron
• 1tsp kewra essence
• A pinch of yellow food colour
• 5-6 green chillies
• 1/2 cup mint leaves

Method
Soak rice for about 30 minutes then boil water in a large pan and add in whole garam masala and salt. Add the soaked rice and boil till they are half done then strain and keep aside. To make the mutton; heat oil in a pan and fry onions until golden brown in colour. Spread them out on a kitchen towel and leave them to cool. Later, crush them and keep aside. In the same pan, add mutton, ginger-garlic paste, red chilli powder, salt, turmeric, green chilli paste, black cardamoms, cinammon stick, cloves, black peppercorns, cumin seeds, crushed onions and chopped tomatoes. Mix and cook till tomatoes are soft and oil separates.
Beat yoghurt then add it to the mutton along with nutmeg and mace. Cover and cook on low heat till mutton is tender, add little water if required. When the mutton is tender, add potatoes and half-a-cup of water. Cover and cook till the potatoes are tender. In a pan, add half of the boiled rice then add in the mutton masala, sprinkle chopped mint leaves, whole green chillies and cover it with rest of the boiled rice. In a bowl, dissolve yellow colour, saffron and kewra essence, and sprinkle over the rice. Lastly, heat two tablespoons of oil and spread on the biryani. Cover with lid, and on very low heat, put the biryani on dum (steam) for about 10-15 minutes.
