Bhajya
Ingredients:
• Moong dal
(with peels)
• Salt to taste
• Red chilli powder
to taste
• Onions, sliced
• Coriander to taste
• Green chilli to taste
• Oil for deep frying

Method
Wash dal and soak for some time so that the peeling separates. Then grind it in a chopper and leave it for some time to ferment, just like you leave pizza dough with yeast. This process takes less time in summers, you may have to add a little bit of baking powder in winters for bhajyas to rise. Once risen, add salt, red chilli powder, onion, green chillies and coriander. Deep fry spoonfuls of the batter in hot oil. Alternatively, you can also wet your palm with a bit of oil or water and make cutlets and fry. Enjoy hot with green chutney.
