Gujarati Style Crispy Okra & Potatoes
Ingredients

· 1lb. fresh or frozen okra, cleaned, thawed and sliced to ½-inch rounds
· 2 medium sized potatoes, cut in small pieces
· 1 large frying pan
· ¼ large onion, finely chopped
· Vegetable oil
· ½ tsp cumin seeds
· ½ tsp chilli powder
· 1tsp dhania-zeera powder
· ¼ tsp turmeric powder
· Salt to taste
· Coriander, chopped, and lemon juice for garnishing

Method
Heat about two tablespoon oil in a frying pan. When well heated, add the sliced okra and stir-fry without mashing the okra on medium heat for two to three minutes. Then, put a lid on the frying pan and allow to fry till golden brown and no longer slimy, stirring occasionally. This should take around 15-20 minutes, taking care not to burn the okra. When cooked, remove the okra on a tissue. Heat about a tablespoon of oil in the same pan and fry the potatoes in it till they are golden brown then remove and place on a tissue. Now heat about half tablespoon of oil and add cumin seeds. When the seeds begin to crackle, add onions and let them soften on low-to medium heat. When the onions are translucent, add all the dry spices. Mix well and add in the fried okra and potatoes. Mix well and add salt to taste. Finally, garnish with a handful of chopped coriander and add lemon juice if desired. Enjoy with some fresh and hot roti.
