Ingredients

· 2 cups rice
· 1 onion, thinly sliced
· 1-2 handfuls of cashew nuts
· 1-2 handfuls of raisins
· 1tsp salt
· 2tsp sugar
· 2tbsp ghee or oil
· 1 stick cinnamon
· 3-4 cloves
· 3-4 cardamom pods
· ½ tsp saunf
· A couple of pinches of saffron

Method
In the rice cooker, add rice with appropriate amount of water and soak for about 20 minutes. While the rice is soaking, heat ghee in a pan then add cardamom, cinnamon and cloves. Once these crackle, add the onions. Sauté until translucent then add the cashew nuts, stir and reduce the heat.
Sauté until onions turn golden and cashew nuts turn golden brown in colour. Add the raisins and stir until they become plump. Add in saunf and stir before turning off the heat. By now the rice should be ready to cook. Take a cup or small container and take out a little bit of the water. Add the onion mix, along with salt and sugar. Stir everything together in the rice cooker. Sprinkle saffron on top and close the lid. Cook on appropriate setting till you feel like it is of good consistency and ready to eat.
