MIDDLE EAST MAGIC


GRILLED KEFTAS
Recipe1(Grilled mutton kabab)

INGREDIENTS:
Mutton minced ………….500 gm
Onion (finely chopped) ……………1
Parsley chopped ……….1/4cup
Coriander chopped ………….1/4
Mint chopped ……………..1/4cup
Garlic minced …….1tbsp
METHOD:
Place the onion, parsley, coriander and mint in a food processor. Mince till it becomes a paste. Put it aside.
Add the minced mutton to the paste. Mix well. Take a portion of the meat minced paste, and mould into a sausage-like shape on wooden skewers. Baste with oil and grill the keftas for 5-6 minutes.

SPANAKOPITA
Recipe1(Spanish Pie)
INGREDIENTS:
Blanched spinach……………… 1cup
Spring Onion (chopped)……………..1cup
Parsley (chopped)…………… 1/2cup
Feta cheese (if unavailable, use cottage cheese or paneer)………….1/2cup
Garlic (finely chopped)……1tsp
Olive oil…………………1/2cup
Oil……….to deep fry
Melted butter……………1/2cup
10 sheets of Fillo pastry (about 3 inch-thin strips) (alternatively, use samosa patti commonly available in the market)
METHOD:
Filling: Heat oil in a pan. Add onions, spring onions, parsley and garlic. Fry till golden. Add blanched spinach, salt and pepper. Remove from fire. Mix feta cheese or paneer. Keep aside. This is the filling for the pie.
Pie: Take each Fillo pastry sheet which is strips. Brush with melted butter. Place the prepared Spinach filling at one end of the pastry strip. Fold like a samosa or triangle shapes several times. As it is long strips, there will be 3 to 4 folds, resembling a triangle samosa but with multiple folds. Deep-fry in hot oil. Served best with yoghurt dip.
