Low Carb Zucchini Lasagna

Low Carb Zucchini Lasagna
Ingredients
· 2½ cups zucchini, sliced lengthwise
· ¼-inch thick
· 1lb. lean ground beef
· ¼ cup onion, chopped
· 2 small tomatoes, cut as you like
· 1 can tomato paste
· 1 garlic clove, minced
· ½ tsp dried oregano
· ½ tsp dried basil
· ¼ tsp dried thyme
· 1/8 tsp pepper
· 1egg
· ¾ cup low fat cottage cheese
· ½ cup mozzarella cheese, shredded
· 1tsp flour

Method
Cook zucchini until tender, drain and set aside. Fry meat and onions until meat is brown and onions are tender; drain the fat. Add the next seven ingredients along with a quarter cup of water and bring to a boil. Reduce the heat and simmer, uncovered until it is reduced to about two cups.
In small bowl, beat the egg slightly. Add cottage and half of mozzarella cheese and flour. In a baking-roasting pan, arrange half of the meat mixture. Top with half of the zucchini and all the cottage cheese mixture. Top with remaining meat and zucchini. Bake uncovered at 175ºC for 30 minutes. Sprinkle with remaining cheese and bake for about 10 minutes longer. Let it stand for about 10 minutes before serving.
