Thai Fish Cakes

Ingredients

· 450 g fish fillet

· 3 tablespoons rice flour

· 1 tablespoon fish sauce

· 1 egg

· ½ cup coriander

· 2 tablespoons Thai curry paste

· 2 teaspoons red chillies

· 100 g green beans

· 1 spring onion

· ½ cup oil

Method

Place fish in the food processor and process for 20 seconds or until smooth. Add rice flour, fish sauce, egg, coriander leaves, curry paste and red chillies and process for about 10 seconds or until well combined. Transfer fish mixture into a bowl. Add sliced green beans and chopped spring onion and mix well. Using wet hands form two rounded tablespoons of mixture at a time into flattish patties. Then, heat oil in the frying pan over medium heat. Now, shallow fry the fish cakes until they are dark golden brown on both sides. Drain on paper towels and serve with sauces of your choice.
