Banana Bread

Ingredients

· 1 cup self-raising flour

· 1 cup white flour

· 1 teaspoon cinnamon

· 4 ripe bananas

· 2 eggs

· ½ cup light olive oil

· ½ cup soy milk

· 1 teaspoon vanilla essence

· 1 extra banana

Method

Sift flours and cinnamon into a bowl. Combine remaining ingredients, except the extra banana and gently fold into the dry ingredients. Place the mixture into a greased and lined 12cm x 22cm loaf tin. Cut the banana into four even slices lengthwise and arrange on top of the banana bread. Bake in a slow oven, 150°C, for an hour. Cuts into slices and enjoy.
