Lauki Halwa

Ingredients

· 1 kg bottle gourd

· ½ cup clarified butter

· 5-6 cardamoms

· Green food colour

· 300 g dried milk

· ½ cup almonds, pistachios

· 1½ cup sugar

· 1 sterling silver leaf

· ½ cup milk

· Screw pine essence

Method

Peel the bottle gourd and deseed, then grate it. Soak in warm water and keep aside. Heat the clarified butter in a pan and add cardamom, fry well. After that, add the bottle gourd and fry for two minutes. Add two-three drops of green food colour in the milk and pour into the pan, then add sugar and cook on high flame. Add half of the dried milk and the screw pine essence while mixing. Cook till the sugar water dried and the clarified butter starts coming out. Add the remaining whole dried milk and mix well. Dish out the halwa and coat with a sterling silver leaf. Garnish with almonds and pistachios, and serve.
