Spicy Cauliflower Stuffed Paratha

· 1 bunch cauliflower

· 1 onion

· 3 tablespoons olive oil

· ½ teaspoon cumin seeds

· 2 tablespoons ginger/garlic paste

· 1 teaspoon salt

· ¼ teaspoon turmeric

· 2 tomatoes

· 1 teaspoon cayenne pepper

· 1 green bell pepper

· Handful cilantro

· 2 cups wheat flour

· ¼ cup salted butter


Heat the oil in a pan on a medium heat. Saute the cumin seeds, ginger/garlic paste, and sliced onions for five minutes. Add chopped cauliflower and saute for few more minutes. Now add salt, cayenne pepper and turmeric. Stir well. Add the sliced green bell pepper. Cover the pot with a lid and let it simmer on low heat for 20 minutes. Garnish with chopped cilantro. Add warm water and salt to the flour. Knead the dough and let it rest for 30 minutes. Roll out two round chapatis. Spread butter on one and spoon over the vegetable mix. Cover it with other chapati and roll with a rolling pin. Heat a skillet. Melt some butter and place the paratha on the skillet. Cook until golden brown. Serve with raita or achaar.
