Giant Cookie

· 200 g butter

· 250 g brown sugar

· 2 egg yolks

· ½ teaspoon vanilla extract

· 275 g flour

· 1 teaspoon baking powder

· 150 g chocolate chips

· 100 g cookie fillings pretzels, nuts, marshmallows etc

· Vanilla ice cream


Heat the oven to 180°C. Tip the butter and sugar into a bowl, beat until combined, then stir in the yolks and vanilla. Tip in the flour, baking powder, chocolate chips, a pinch of sea salt and any other fillings you want to add. Mix until a crumbly dough forms. Lightly butter a frying pan. Spoon in and flatten the cookie mixture. For a gooey dessert, bake for 20 minutes, leave to rest for five minutes, then scoop straight from the pan and serve with ice cream.
