Beef and Olive Koftas with Flatbreads

· 800 g beef mince

· 100 g green olives

· 60 g walnut halves

· 50 g currants or raisins

· ½ red cabbage

· 2 lemons

· A bunch fresh parsley

· 2 tablespoons olive oil

· 4 flatbreads

· Pickled green chillies

· 1 cucumber


Put the mince, olives, walnuts and dried fruit in a bowl, season with salt and pepper and mix well. Divide into eight equal portions, and then shape each portion around a skewer. Toss the cabbage in a mixing bowl with the juice of one lemon, most of the parsley, one tablespoon oil and a little salt and pepper. Heat the grill to medium-high. Brush the koftas with the remaining oil and grill for four minutes on each side until cooked through. Arrange the koftas on warm flatbreads with the red cabbage, pickled chillies and cucumber. Cut the remaining lemon into wedges, squeeze over the top and serve scattered with remaining parsley.
