Thai Turkey Stir-Fry

· 300 g rice noodles

· 1 teaspoon sunflower oil

· 400 g turkey breast steak

· 340 g green beans

· 1 red onion

· 2 garlic cloves

· Juice of 1 lime

· 1 teaspoon chilli powder

· 1 red chilli

· 1 tablespoon fish sauce

· Handful coriander


Cook the rice noodles following the pack instructions. Heat the oil in a non-stick pan and fry the turkey over a high heat for about two minutes. Add the beans, onion and garlic, and cook for a further five minutes. Stir in the lime juice, chilli powder, fresh chillies and fish sauce, and then cook for three minutes more. Stir in the noodles and herbs, and then toss everything together before serving.
