Lime and Chilli Chicken Burger

Ingredients

· Olive oil

· 1 lime

· A bunch coriander

· 1 garlic clove

· 2-3 red chillies

· 1 ginger piece

· 1 chicken fillet

· ½ avocado

· 1 tablespoon Greek yogurt

· 1 bread roll

· Lettuce and tomato slices to serve

Method

Blitz one tablespoon oil, half the lime juice, coriander and garlic with all the lime zest, chilli and ginger in a blender, then season. Pour this over the chicken and leave it to marinate for 30 minutes. Mash the remaining garlic, coriander and lime juice with the avocado. Add the yogurt and season. Heat a griddle pan until hot, wipe the excess marinade off the chicken and cook for five minutes on each side until cooked through. Pile the guacamole into the bun, top with the chicken and add the lettuce and tomato.
