Elote – Mexican Street Corn

Ingredients
· 6 ears corn, rinsed

· Vegetable oil, for brushing if air frying

· ¼ cup mayonnaise

· ¼ cup Mexican crema or sour cream

· ½ cup grated cotija cheese

· 3 teaspoons chilli powder

· Chopped cilantro and lime wedges, for serving

Method
Prepare a grill at the medium-high heat; heat for five minutes (or preheat a grill pan over medium-high heat). Grill the corn, turning often, until slightly charred all over, for about 10 minutes. Meanwhile, in a small bowl, mix the mayonnaise and crema. Transfer the corn to a platter. Brush with the mayonnaise mixture Top with cotija, red chilli powder, and cilantro. Serve warm or at room temperature with lime wedges alongside. You can even prepare this dish in an air-fryer.
