Steak Salad with Arugula and Grapefruit

Ingredients:
· 1lb. sirloin steak
· Salt to taste
· Pepper to taste
· 2 red or pink grapefruits
· 2tbsp fresh lime juice
· 2tbsp olive oil
· 1 small avocado
· 1 bunch baby arugula
· 2 cups fresh coriander
· Unsalted roasted pepitas (hulled pumpkin seeds)

Method:
Heat broiler; line a broiler-proof rimmed baking sheet with foil. Place the steak on the prepared pan and season with one-fourth teaspoon each of salt (if using) and pepper. Broil to desired doneness, four to five minutes per side for medium-rare. Transfer to a cutting board and let it rest for at least five minutes before slicing. Meanwhile, cut away the peel and white pith from the grapefruits. Cut the grapefruits into segments. In a small bowl, whisk together the lime juice, olive oil, and one-fourth teaspoon each of salt (if using) and pepper. Dice the avocado. In a large bowl, gently toss the arugula, coriander, avocado, grapefruit and sliced steak. Drizzle with the lime juice mixture and sprinkle with pepitas, if desired.
