Gluten-free Chicken Nuggets

Ingredients

· For chicken nuggets

· 180 g ground almonds

· 2 eggs

· ½ kg chicken pieces

· 1½ teaspoon salt

· Ground black pepper

· 1 tablespoon butter

· For BBQ sauce

· 3 tablespoons tomato purée

· 2 tablespoons butter

· 2 tablespoons vinegar

· ½ teaspoon paprika

· Salt and black pepper

Method

Preheat the oven to 200°C. Line a baking tray with baking paper. Pour ground almonds into a bowl and stir in the seasoning. Beat eggs in a separate bowl. Season the chicken pieces with salt and pepper. Dip each chicken piece first in the egg, then roll in almonds until covered. Arrange the nuggets on the prepared baking tray. Melt butter in a saucepan over low heat. Drizzle the melted butter over the nuggets. Bake in the oven for 20 minutes, turning halfway through cooking, until golden-brown. Meanwhile, for BBQ sauce, whisk together the tomato purée, melted butter and vinegar. Season with salt, pepper and smoked paprika. Serve the nuggets with BBQ sauce.
