Scrambled Eggs with Spinach and Kale

Ingredients

· 4 eggs

· 75 ml cream alternative

· Sunflower oil

· ½ red onion

· 1 green pepper

· 40 g kale

· 1½ teaspoon Cajun spice mix

· 50 g spinach leaves

· Salt and black pepper

Method

Beat together the eggs, cream alternative, salt and pepper. Add oil to a non-stick frying pan over medium heat. Add the onion and green pepper and cook for four minutes, or until slightly softened. Add the kale with a dash of water and cook for two minutes. Sprinkle over the Cajun spice mix, a pinch of salt and the spinach. Cook, stirring, for one minute or until the spinach has wilted. Add oil to the pan. Pour in the egg mixture and let it set for a few seconds, then gently stir until scrambled and just cooked. Be careful not to overcook. Spoon onto warmed plates and serve.
