Spicy Vegetable Samosas

Ingredients

· 2 tablespoons olive oil

· 1 teaspoon all-spice powder

· ½ teaspoon smoked paprika

· 1 teaspoon cumin seeds

· ½ teaspoon chili powder

· 1 onion

· 1 carrot

· 2 potatoes

· 2 red bell peppers

· 1 teaspoon ginger powder

· 1 teaspoon garlic powder

· 1 cup water

· 1 cup peas

· 10 egg or spring roll wrappers

Method

Combine the oil and spices in a skillet over medium low heat. Stir the spices in the oil for two minutes. Add the vegetables, raise the heat to medium and stir-fry for five minutes. Stir in the ginger, garlic powder and water. Cover the skillet and simmer for 10 minutes, stirring occasionally. Stir in the peas and cook for a few more minutes until they're heated through. Take the skillet off the heat and let the filling cool down. Then, position a rack in the oven and heat it to 275°C. Give cookie sheet a pretty good coating of nonstick, have a container of water, a pastry brush and your wrappers ready. As you wrap the samosas, arrange them on the cookie sheet. Pop them into the oven for about 10 minutes. Turn and return them to the oven, for another 10 minutes. Serve hot with tomato ketchup.
