Vegetarian Fried Rice

Ingredients

For the sauce

· 2 tablespoons soy sauce

· 2 teaspoons vinegar

· 2 teaspoons olive oil

· 1 teaspoon maple syrup

For the fried rice

· 2 eggs

· Salt to taste

· 2 tablespoons sesame oil

· 3 cups rice

· 1 onion, 2 spring onions

· 2 cups mixed veggies

Method

In a bowl mix together the ingredients for the sauce. Then, chop your veggies into bite sized pieces. Get a pan to high heat, add the sesame oil and pour in the egg. While scrambling, add a small dash of salt and vinegar. The egg should be done in about a minute, and then set aside in a bowl. Add another tablespoon of oil into the pan on high heat and add the onion. Let it fry for about 30 seconds (add the spring onions in the end!). Transfer the veggies into the pan. Stir fry for five minutes. Reduce the heat; add the cooked rice, sauce and eggs. Stir well. Now you can safely add your spring onions and serve.
