Vegetarian Fajita Pasta

Ingredients

· 4 cups pasta

· 2 cups Enchilada sauce

· 6 garlic cloves

· 1 cup black beans

· Taco seasoning mix

· 1 cup bell peppers

· Salt and pepper to taste

· 1 cup onions

· ½ cup corn

· Avocado slices

Method

Start with frying the garlic in cooking oil. If you want to go for oil free cooking, simply use vegetable broth. Add in the chopped onions. Together, it will take almost four minutes until the mixture is slightly golden brown. Next and the last step is to add in all the other ingredients (i.e. the Enchilada sauce, Taco seasoning, bell pepper, and corn) to that pot. After five minutes, add in the pre-cooked pasta and cook for about four minutes more. Divide into bowls or plates, and serve warm with avocado slices on top.
