Southwest Chicken Burrito Bowls

Ingredients

· 2 cups kale or lettuce

· 1 cup grape tomatoes

· 3 cups cooked cubed chicken

· ¾ cup corn

· 1½ cup black beans

· 1 cup cooked rice

· 1 teaspoon paprika

· ½ teaspoon cumin

· ¼ teaspoon cayenne

· ¼ teaspoon pepper

· Avocado lime dressing (optional)

Method

Cook the rice according to package instructions. Mix in the paprika, cumin seeds, cayenne, and pepper when the rice has about five minutes left to cook completely. Set aside. Then, layer each bowl or container with kale, tomatoes, shredded chicken, corn, beans, and rice. Top the ingredients with optional dressing and enjoy immediately or you can even refrigerate the mix for later use.
