Coconut Ice Cream

· 1350 g boneless country-style beef ribs
· ½ teaspoon salt
· ½ teaspoon pepper
· 1 large onion, cut into ½-inch rings
· 1 bottle hickory smoke-flavoured barbecue sauce
· ½ cup maple syrup
· ¼ cup spicy brown mustard
· Thinly sliced green onions, optional
Sprinkle the ribs with some salt and pepper. Place the onion in a slow cooker. Top with the ribs. In a large bowl, combine the barbecue sauce, maple syrup and mustard; pour over ribs. Cook, covered, on low heat for about four hours or until the meat is tender and cooked through. Transfer the meat to a serving platter; keep it warm. Pour the cooking liquid into a large saucepan; bring to a boil. Reduce the heat; simmer, uncovered, for 10 minutes or until the sauce is thickened. Serve with the beef. If desired, sprinkle with some spring onions.
