Barbacoa Beef Bowls

Ingredients

· 4 cups rice

· Juice of a lime

· 2 cups Barbacoa Beef

· 2 cups cherry tomatoes

· 1 can black beans

· 1 cup corn kernels

· ½ cup green onion

· 1 avocado

Method

In a bowl, toss together the warm rice and fresh lime juice. Divide evenly among four serving bowls. Into each bowl, place half cup beef, half cup tomatoes, ¼ of the beans, ¼ cup corn, two tablespoons green onion, and avocado as per taste. Garnish each bowl with a tablespoon of chopped cilantro leaves.
