Mug Brownie

Ingredients

· 1 tablespoon coconut oil

· 2 tablespoons coconut milk

· ¼ teaspoon vanilla extract

· 1½ tablespoons flour

· 1 tablespoon sugar

· 1 tablespoon cocoa powder

· 1/8 teaspoon salt

· 2 teaspoons chocolate chips

Method

Place coconut oil in a microwave-safe coffee mug and microwave on high until melted, 15-20 seconds. Cool for a minute. Whisk in the coconut milk and vanilla extract. Add flour, sugar, cocoa and salt; continue whisking until completely incorporated. Stir in the chocolate chips. Microwave on high until firm to touch and no longer glossy, 30 to 40 seconds. Let stand for 10 minutes before serving.
