Sea Bass with Sizzled Ginger, Chilli & Spring Onions

Ingredients

· 6 x sea bass fillets

· 3 tablespoons sunflower oil

· 1 piece ginger

· 3 garlic cloves

· 3 red chillies

· 1 bunch spring onion

· 1 tablespoon soy sauce

Method

Season the sea bass fillets with salt and pepper, and then slash the skin three times. Heat a frying pan and add one tablespoon sunflower oil. Fry the sea bass fillets, for five minutes. Turnover, cook for another one minute, then transfer to a serving plate. Heat two tablespoons sunflower oil, and fry the ginger, cut into matchsticks, sliced garlic cloves and red chillies for two minutes until golden. Take off the heat and toss in the bunch of shredded spring onions. Splash the fish with a little soy sauce and spoon over the contents of the pan.
