Easy Burritos

Ingredients

· 5 eggs

· 1 onion

· 3 mushrooms

· 1 handful of spinach

· 1 tomato

· 1 capsicum

· 2 slices cheese

· 2 flour tortillas

· 1 tablespoon cooking oil

· ¼ teaspoon salt

· ¼ teaspoon pepper

Method

In a pan on medium heat add oil, onions, and mushrooms until they develop colour and set aside. Saute spinach until wilted. Set aside. In the same pan add oil, eggs, and prepare a scramble. Add broken cheese slices, season with salt and pepper, mix well, and set aside. In a skillet, on medium-high heat warm up the tortillas. To assemble, place the warm tortillas on a working surface. Add half portions of sauteed onions, mushroom and spinach, tomatoes, green bell pepper, and scrambled eggs at the center. Fold opposite ends of the tortilla towards the center. Roll the burrito and cut into half if desired. Serve and enjoy.
