Crispy Honey Chilli Potatoes

Ingredients

· 3 potatoes

· 3 tablespoons flour

· 1 onion

· 3 garlic cloves

· 1 ginger piece

· 3 spring onions

· 1 tablespoon soy sauce

· 3 tablespoons chilli sauce

· 2-3 tablespoons honey

· Salt to taste

· 1 tablespoon vegetable oil

· Spring onions for garnish

· Coriander leaves

Method

Wash the potatoes, peel the skin and chop lengthwise into fingers. Transfer this to a bowl. Add corn flour, salt and toss till the potatoes are coated. Heat the oil in a pan for frying. Once the oil is hot add the potatoes and fry them till they are crisp and golden in colour. Transfer it to a paper towel to drain excess oil and keep it aside. Heat one tablespoon of oil, add chopped onions, garlic cloves, ginger, and spring onions and saute till onions becomes translucent. Add soy sauce, chili sauce, honey and mix well. Cook this on medium flame till it starts to bubble. Switch off the flame. Just before you are ready to serve toss the fried potatoes in the sauce. Garnish it with cilantro and spring onions. Serve immediately and enjoy.
