Broccoli & Beef Noodles

Ingredients

· 3 blocks egg noodles

· 1 head broccoli

· 1 tablespoon sesame oil

· 400 g beef strips

· 1 cup spring onions

For the Sauce

· 3 tablespoons soy sauce

· 2 tablespoons oyster sauce

· 1 tablespoon tomato ketchup

· 2 garlic cloves

· 1 knob ginger

· 1 tablespoon white vinegar

Method

Start by making up the sauce. Mix the ingredients together in a bowl. Boil the noodles according to pack instructions. A minute before they are ready, tip in the broccoli. Meanwhile, heat the oil in a wok until very hot, and then stir-fry the beef for three minutes until well browned. Tip in the sauce, give it a stir, let it simmer for a moment, and turn off the heat. Drain the noodles, stir into the beef and serve straight away, scattered with spring onions.
