Salmon with Spicy Cucumber-Pineapple Salsa

Ingredients
· 600 g French fries
· 50 g parmesan
· 50 g mature cheddar
· 1 teaspoon garlic salt
· 125 g mayonnaise
· 85 g gochujang
· 2 teaspoons rice vinegar
· 2 spring onions
· ½ bunch coriander
· 2 tablespoons sesame seeds
· 1 tablespoon red pepper flakes
Method
Heat the oven to 220°C. Spread out the fries on a baking tray. Bake for 15 minutes, then toss the fries with a fish slice or spatula, sprinkle over the grated cheeses and garlic salt, and bake for another 10-12 minutes or until golden and crisp. Meanwhile, mix together the mayonnaise, gochujang and vinegar. Use a spoon to drizzle the gochujang mayo all over the hot fries, alternating with sprinkles of spring onions, coriander, sesame seeds and pepper flakes. Finish with a final drizzle of the spicy mayo.
