Salmon with Spicy Cucumber-Pineapple Salsa

Ingredients
· 650 ml milk
· 40 g plain flour
· 40 g butter
· 2 teaspoons Dijon mustard
· 150 g mature cheddar
· 180 g frozen peas
· Handful of parsley
· 300 g macaroni
· 300 g fish pie mix
· Green salad to serve
Method
Pour the milk into a pan and add flour and butter. Set over a medium heat and whisk continuously until you have a smooth, thick white sauce. Remove from the heat; add the mustard, most of the cheese, peas and parsley. Meanwhile, boil the pasta in a pan of water until just cooked. Drain. Heat the oven to 200°C. Tip the pasta into the sauce and add half the fish, stir everything together then tip into a baking dish. Top with rest of the fish, pushing it into the pasta a little, and then scatter with the remaining cheese. Bake for 30 minutes until golden, then serve with salad, if you like.
