Spiced Turkey Burgers with Pea Guacamole

Ingredients

· 200 g turkey mince

· 2 tablespoons red onion

· 2 teaspoons chipotle paste

· 2 tablespoons coriander

· 2 slices emmental

· 2 buns

· Salad to serve

For Guacamole

· 100 g frozen peas

· 1 tablespoon onion

· ¼ chopped red chilli

· A handful coriander

· ¼ teaspoon ground cumin

· 2 tablespoons yoghurt

· A squeeze of lime

Method

To make the burgers, put the turkey mince, red onion, chipotle paste and coriander in a bowl. Season, mix well and form into patties. To make the guacamole, put the blanched frozen peas, onion, red chilli, coriander, ground cumin, yoghurt and a squeeze of lime in a food processor and whizz until blended. Cook the burgers for five minutes on each side until golden. Add a slice of emmental, and heat until melted. Serve in buns with the guacamole and salad.
