Crumb-Fried Chicken

· 1 whole chicken

· 2 eggs

· 1 tablespoon garlic paste

· 1 cup flour

· Dash of black pepper

· Red chili flakes

· 1 tablespoon salt

· Powdered bread crumbs

· Oil for deep-frying


Cut the chicken into six pieces. Place the chicken, eggs, garlic paste, refined flour, black pepper, red chili flakes and salt in a bowl and mix well. Leave thus for at least an hour to marinate. Lift the pieces and coat with the breadcrumbs and keep aside. Heat the oil on a medium flame till a piece of bread thrown in comes up at once. Place as many chicken pieces but without touching each other. Turn once and lower the heat and let fry to a golden brown and then, turn once again till golden brown on both sides and cooked through. Drain on absorbent paper and serve. In case you want to serve later, freeze them uncooked for up to a month and deep fry to a golden colour before serving.
