Flourless Chocolate Lamington Cake

· 400 g dark chocolate

· 150 g unsalted butter

· 6 eggs

· 1 cup brown sugar

· ½ cup caster sugar

· ½ cup desiccated coconut

· 75 g almond meal

· 25 g dark cocoa


Preheat oven to 160°C. Grease a cake pan and line the base and side with baking paper. Place chocolate and butter in a bowl set over a saucepan of simmering water. Stir occasionally until melted and smooth, and then cool. Whisk eggs and sugars in a bowl until combined and sugar has partially dissolved. Whisk in coconut, almond meal, cocoa and chocolate mixture. Pour into prepared pan, place on a tray and bake until edges are set but centre is a bit wobbly. Cool to room temperature and chill for at least two hours before serving.
