Cilantro Lime Chicken Thighs

· 1½ kg chicken thigh

· 1/3 cup olive oil

· 6 garlic cloves

· 1 tablespoon honey

· 2 limes

· ¼ cup cilantro

· 2 tablespoons chilli powder

· 1 teaspoon salt

· ½ teaspoon pepper


In a bowl mix the olive oil, garlic, honey, zest and juice of limes, cilantro, chili powder, salt and pepper. Add the chicken to the marinade, stir to coat well. Marinate for 15 minutes at room temperature or up to two hours in the refrigerator. Heat a cast iron pan over medium-high heat. Add the chicken thighs in a single layer, so they are not touching. Cook for about 10 minutes on each side until the chicken thighs are cooked through and no longer pink in the center. Serve.
