Mango Trifle

· 1 cup white chocolate chips

· 3 cups heavy whipping cream

· 5 cups mango chunks

· 3 tablespoons lime juice

· ¼ cup brown sugar

· 1 teaspoon vanilla extract

· ½ cup macadamia nuts

· A prepared cake


Stir together the white chocolate chips and 2/3 cup of the heavy whipping cream in a bowl. Microwave for one minute. Let it sit for a while. Whisk until smooth. Cover loosely and place in the refrigerator to cool. Meanwhile, chop the macadamia nuts and set aside. Cut the mangoes into small pieces. Add the brown sugar and lime juice. Stir to combine; continue stirring gently until the brown sugar begins to dissolve. Set aside. Add the remaining 21/3 cups heavy cream and vanilla into a bowl. Beat on high speed until soft peaks form. Drizzle in the white chocolate mixture. Continue beating until stiff peaks form. Tear the cake into bite-sized pieces. Layer the ingredients in a dish on top of the cake, mangoes, whipped cream and then macadamia nuts. Garnish with whipped cream along with a sprinkling of nuts. Serve.
