Garlic Prawn Skewers

· 500 g green prawns

· 4-5 cloves garlic

· ½ cup honey

· 2 tablespoons soy sauce

· 5-6 red chillies


Devein prawns by running a sharp knife along the back and removing the intestinal tract. Place eight – 12 bamboo skewers in cold water to soak. Combine the remaining ingredients in a shallow dish. Add prawns and stir to coat well. Cover and refrigerate for at least an hour. Thread the prawns onto each skewer. Place remaining marinade in a saucepan and simmer for five minutes until it has reduced and thickened. Heat a char grill pan over medium-high heat. Cook prawns for two-three minutes each side, basting throughout with the reduced marinade, until they are just cooked through. Serve immediately.
