Tikka Masala Soup

Ingredients

· 2 tablespoons coconut oil

· 1 onion

· 3-4 garlic cloves

· ½ teaspoon cayenne pepper

· 1 tablespoon ground spice mix

· 1 teaspoon ground ginger

· ½ teaspoon cumin seeds

· 1 teaspoon turmeric

· ½ teaspoon cinnamon

· 2 cups chicken stock

· 1 can crushed tomatoes

· 1 can full fat coconut milk

· Salt to taste

· 1 whole rotisserie chicken

Method

Heat coconut oil over med-high heat in a heavy soup pot. Saute the onion for five minutes then add the garlic and cook for three more minutes. Add cayenne pepper, ground spice mix, ginger, crushed cumin seeds, turmeric, and cinnamon. Saute for three minutes until spices are fragrant. Add the mixture to the pot, two cups of chicken stock, tomatoes and coconut milk. Simmer for 30 minutes. Using an immersion blender, puree the soup until smooth and creamy. Season with salt, add the shredded chicken and serve.
