Moroccan-Style Lamb Burgers

Ingredients

· 1 onion

· 1 piece ginger

· 2-3 garlic cloves

· Handful of coriander leaves

· 2 teaspoons ground coriander

· 2 teaspoons ground cumin

· 1 teaspoon cinnamon

· 75 g dried apricots

· 500 g lean lamb mince

· Whole meal buns, lettuce, sliced tomatoes, red onion and mayonnaise, to serve

Method

Blend the onion, grated ginger and garlic and fresh coriander leaves in a food processor until finely chopped. Add the spices, apricots, lamb mince and all the seasoning. Blend until it turns slightly chunky. Shape the lamb mixture into burger patties. Cook under a medium-hot grill for five minutes each side until cooked through. Serve in whole meal buns with the lettuce, tomatoes, sliced red onions and mayonnaise.
