Beef Bulgogi Stir-Fry

Ingredients

· 1 piece of ginger

· 4 tablespoons soy sauce

· 4 tablespoons rice vinegar

· 3-4 garlic cloves

· 2 tablespoons chopped pineapple

· 2 teaspoons Korean chilli powder

· 3 tablespoons golden caster sugar

· 3 teaspoons sesame oil

· 500 g sirloin or rump steak

· 1 onion

· 1 tablespoon toasted sesame seeds

· 200 g cooked rice

· Chopped spring onions, to serve

Method

Put the grated ginger, soy sauce, rice vinegar, crushed garlic, pineapple chunks, chilli flakes, sugar and one teaspoon of the sesame oil in a food processor and blend until fine paste forms. Pour the marinade into a bowl, add the meat, mix well and leave it to sit while you prepare the onion. Heat the remaining sesame oil in a wok or frying pan until very hot. Add the chopped onion and stir-fry for a few minutes. Add the beef and the marinade, stirring constantly until it’s cooked through, for about 15 minutes. Sprinkle with the sesame seeds and serve with rice and chopped spring onions.
