Sausage, Kale and Potato Skillet

· 3 tablespoons olive oil

· ½ kg red potatoes

· Salt & pepper, to taste

· 2 teaspoons dried thyme

· 6 chicken sausages

· 1 onion

· 1 tablespoon minced garlic

· 1 bunch curly kale

· 1 lemon


Cut the potatoes in half and boil them in salted water until tender. Heat two tablespoons olive oil in a skillet over medium-high heat. Add potatoes (cut side down) and cook without stirring until they begin to turn golden brown. Stir and continue cooking until all sides are crispy. Season the potatoes with salt, pepper and thyme. Add another tablespoon of olive oil and the chicken sausages to the potatoes. Cook until all sides of the sausage are crispy. Then, add onions and cook until just tender, about 5 minutes. Add the garlic, cook stirring until fragrant, about one minute. Add the kale. Stir often and cook until the kale is wilted. Squeeze a lemon over the top of the dish and serve.
