Sweet Potatoes & Chicken Hash

· 2 tablespoons olive oil

· 2 sweet potatoes, cut into cubes

· 1 red bell pepper

· 1 green bell pepper

· ½ yellow onion

· ½ teaspoon kosher salt

· 1-2 cups chicken rashes

· 2 eggs

· 1 avocado

· Fresh cilantro for serving


Heat the olive oil in a skillet set over medium-high heat. Fry the sweet potatoes for about five minutes, turning occasionally when starting to brown. If the sweet potatoes brown too quickly, reduce the heat slightly. Add the thinly sliced red and green bell peppers and sliced onions and continue to cook until all the vegetables are tender, about 10 minutes. Add the chicken rashes and fry until cooked through. Season with the salt. Top with fried eggs, avocado and cilantro leaves.
