Barbecue Spiced Chicken with Charred Corn

· 8 chicken drumsticks

· Olive oil to drizzle

· 4 corn cobs

· Chilli oil

· Lime wedges

· Cos lettuce wedges

For the Spice Rub

· 2 tablespoons sea salt flakes

· 1 tablespoon smoked paprika

· 1 tablespoon ground coriander

· 1 teaspoon chilli powder

· 1 teaspoon ground black pepper

· ½ teaspoon ground cloves

· ½ teaspoon ground all-spice powder


Preheat the barbecue with lid closed over medium heat. For the spice rub, place all the ingredients in a container and shake to combine. Brush the chicken with the olive oil, and then rub over three tablespoons of the spice rub. Place the chicken and corn on the barbecue and cook for 15-20 minutes, turning, until the chicken is cooked through and corn is slightly blistered. Remove from the barbecue. Drizzle the chicken with a little chilli oil and serve with corn, lime and cos lettuce.
