Chilli Prawn Linguine

· 375 g linguine

· 500 g raw peeled prawns

· 490 g carbonara pasta sauce

· 120 g baby spinach

· 2-3 long red chillies


Cook the pasta in a saucepan of boiling water following packet directions or until al dente. Drain well. Meanwhile, heat a frying pan over high heat. Spray with olive oil spray. Cook the prawns, turning, for five minutes or until they curl and change their colour. Add the pasta sauce and cook, stirring, for five minutes or until the pasta sauce is heated through. Add the spinach and red chillies, if using, and toss to combine. Add the pasta to the prawn mixture in the pan. Toss until the mixture is well combined and heated through. Season.
