Honey and Soy Prawn Noodle Stir-Fry

Ingredients

· 180 g dried egg noodles

· 400 g green prawns

· 200 g honey & soy stir-fry sauce

· 2 tablespoons vegetable oil

· 1 onion, cut into wedges

· 1 bunch broccolini, trimmed and halved

· 150 g snow peas

· ½ red capsicum, seeds removed and thinly sliced

· Sliced green onions to serve

Method

Cook noodles according to packet instructions. Drain and set aside. Add one tablespoon of honey and soy stir-fry sauce to prawns and mix well to coat. Heat half the oil in a wok over high heat and cook the prawns in two batches until just seared. Remove and set aside. Add the remaining oil and stir-fry onions for two minutes. Add the broccolini, snow peas and capsicum and cook for three minutes. Stir in the honey and soy stir-fry sauce along with the water and cook for a minute. Add the prawns and noodles; stir-fry until evenly coated and heated through. Serve topped with sliced green onions.
