Spicy One Pot Asian Chicken Noodles

Ingredients

· ¼ cup sesame oil

· 200 g dry noodles

· 500 g boneless chicken, cut into cubes

· 9-10 garlic cloves

· 8-9 dried red chillies

· 4 bay leaves

· 1 cinnamon stick

· 2 star anises

· 1 teaspoon salt

· 2 tablespoons brown sugar

· 1 chicken bouillon cube

· 3 tablespoons soy sauce

· 2 tablespoons red grape vinegar

· 1 cup tomato paste

· ½ cup peas

· ½ cup sliced carrots

· 1 cup bell peppers, cut into squares

· 1 cup cabbage, cut into squares

· Sesame seeds and chopped green onions

Method

In a pot, add oil, chopped garlic, bay leaves, dried red chillies, cinnamon stick and star anise. Saute on medium heat, until the garlic turns golden brown. Add chicken cubes to the pot, along with the veggies that take longer time to cook like carrot and peas. Add salt, sugar, soy sauce and red grape vinegar. Saute till the chicken changes its colour. Add in a chicken bouillon cube and tomato paste. Throw in the remaining veggies and stir for a minute. Add water and the noodles. Stir well. Cover the pot and let the noodles simmer on medium heat for 10 minutes. Stir occasionally. Check if the noodles are done and adjust the seasonings. Sprinkle some sesame seeds and green onions on top and serve hot.
