Suji Ka Halwa

Ingredients

· 1 cup semolina

· ½ cup ghee

· 4-5 green cardamom

· 4½ cups water

· 1½ cup sugar

· 2 tablespoons powdered milk

· Yellow food colour (optional)

Method

In a pot add water, sugar and food colour and keep on high heat. Let the water boil. Once the water starts to boil, lower the temperature to medium and let it simmer. In the meantime, in another pot, add ghee and cardamom. Let it heat up for two minutes. Reduce the flame to low and add the semolina. Stir till it absorbs all the ghee. Saute for five minutes making sure the semolina doesn't turn brown. Then, add a ladle full of the hot sugar syrup in this semolina and mix well. Now turn off the flame and transfer the semolina in the pot of sugar syrup. Mix well. Cover the pot and let it simmer for five minutes. Stir to see if the halwa seems to be binding together. Sprinkle almond shavings, pistachios and serve warm.
