Salmon with Spicy Cucumber-Pineapple Salsa

· 3 nests medium egg noodles
· 140 g broccoli, chopped into small florets
· 140 g baby corn, halved
· 1 tablespoon olive oil
· 1 red pepper, sliced
· 300 g prawns
For the Sauce
· 3 tablespoons tomato ketchup
· 2 tablespoons oyster sauce
Cook the noodles, broccoli and corn in the boiling water for five minutes, or until tender. Drain and set aside. Heat the oil in a frying pan or wok and fry the pepper for three minutes, until starting to soften. Tip in the noodles and vegetables along with the prawns and toss together. Add the sauce ingredients and heat everything through for three-four minutes, until piping hot. Enjoy!
