Chia & Yogurt Pudding with Berries

· 2 sheets gelatin

· 300 ml milk

· 45 g chia seeds

· 2 teaspoons vanilla extract

· 300 ml yogurt

· 320 g mixed berries

· Handful of mint leaves


Put the gelatin in a bowl of cold water. Warm the milk with chia seeds and vanilla in a saucepan, stirring over low heat. Remove from the heat. Squeeze the gelatin to remove any excess water, then stir into the warm milk until it dissolves. Stir in the yogurt, then pour the mixture into mini bowls, sprinkled with a little water. Cover and chill. Blitz a quarter of the berries in a bowl with a hand blender. Cover and chill along with remaining berries. To serve, run a knife around the inside of the moulds to loosen, then turn out onto plates. Spoon over the berry sauce and scatter with the berries and mint leaves.
