Mango Cheesecake Dessert Cups

· 250 g cream cheese

· 1 cup thickened cream

· 125 ml double cream

· ¼ cup caster sugar

· 1 lemon, rind finely grated

· 1 tablespoon lemon juice

· 1 mango, thinly sliced

· Passionfruit pulp, to serve

· Mint leaves, to serve


Beat cream cheese in a bowl until smooth. Add the thickened cream, double cream, sugar and lemon rind. Beat for two-three minutes, until thick and creamy. Stir through the lemon juice until combined. Dollop some cream cheese mixture in the base of four glasses. Top with the sliced mangoes. Continue layering and finish with mango slices. Top with the passionfruit pulp, mint leaves and enjoy!
